Delicious Summer Recipe: Grilled Salmon and Shrimp with Mango-Avocado Salad
One of my favorite things to do during the summer is to hang out with friends and grill by the pool. I’m always looking for quick, delicious, and easy recipes to make, and this has to be one of my favorites.
Best part about this particular recipe – it’s perfect for summer since the mangoes pair well with the salmon. Not to mention, this is one recipe that is also healthy which means you won’t feel bloated after!
Ingredients:
- Salmon
- Shrimp
- Rice
- Avocado Mango Salad:
- Avocado, mango, red pepper, yellow pepper, and onion
- Olive oil, salt, and lemon juice for seasoning
Recipe:
Step 1: Let the salmon and shrimp unthaw if they’re frozen.
Step 2: To make the salmon, season it the way you like. I love to put some honey and butter on mine. Make sure to pre-heat the grill for medium heat. Put some aluminum foil on the grill so the salmon doesn’t stick, and cook for about 15 minutes.
Step 3: Put some shrimp on some skewers and let them cook on the grill for about 15 minutes as well.
Step 4: Make the salad. To do that, chop up some mangoes, avocados, red peppers, yellow peppers, and onions. Season it with olive oil, lemon juice, and salt and you’re ready to go.
